Hey guys, welcome to blogmas day 8!!!!
So if your like me, part of the reason you love Christmas is the food right??? Especially the mince pie’s, their like the most incredible dessert in Christmas, and they taste great from the shop, but they also taste amazing when you cook them, even if they are cheats mince pie!! And this recipe that I’ve put together for you means that if you have friends coming round in half an hour, they can arrive just as you are taking out some fresh mince pie’s from the oven even though they were super simple!!!!!!!!!
You will need:
ready made pastry Mince meat One egg One cupcake tin Round cutter(one big one small)
1: Preheat you oven to 220c/200c fan/ gas 7 and your cupcake tin ready (muffin tins work too but they are a bit too big and the circles don’t really fit, basically it is just a pain)
2: cut out 12 big circles and 12 smaller circles with you cutters from the pastry, you could also experiment with star shapes for the smaller circles.
3: lay out the bigger circles in the bottom of your tins and make sure you have pushed them down but not so much that they rip. Using a teaspoon, spoon in one spoon of mince meat into the tin. Don’t over fill them because they will explode in the oven which isn’t a huge problem but they just won’t look as neat.
4: lay on the lids of your mince pies and if you need to, beat an egg and with a glazing brush dab the ends with egg to help them stick. Then with a sharp knife, make two slits in the top so they can breathe in the oven. With the rest of your beaten egg, brush the top of them with the egg for a golden glaze.
5: pop them in the oven for 15-20 minutes or until they are golden brown, take them out, and eat them warm for the best taste.
And your all done, these taste great and if you have little children running around the house this is the best thing to do with them because it’s easy and they taste great. I hope you enjoy them lots and leave me comments to let me know if you enjoyed baking them!!!
